The Hamachi Kama (Collar of Yellowtail Tuna)

Broiled with just a hint of salt on the skin, the meat inside was buttery, moist and delicious...the skin crispy. Just phenomenal. I make my own tempura dipping sauce. With rice and steamed bok choy, the absolute perfect home cooked meal. Love my Riviera Seafood Club source.

The Collar.....

A choice cut..Given the quality after defrosting ....The Fish is almost fresh..With the Bone structure intact I found this perfect in a Cioppino as remained intact and did not break up. I have also simply grilled Caribbean Style and excellent as well....the meat remains intact and not dry as the collar provides Moisture and Juices....but do not over cook...I will certainly order this delicacy again....for the boring who despise Fish with bones...stay with a dried out filet of Nauseating (UGGGG.....Tilapia) . Bueno Probecho
