How I do the Belly

I love this slice of the Fish...and Riviera provides the Perfect Piece....after slightly defrosting I remove the skin.....and watch for a few bones....they may be there...I like to thin slice and marinate in Fresh squeezed Lime juice...Maybe half a lime...I then add sliced Jalapenos...salt ..pepper...a sprinkle of cilantro...diced avocado...and a generous dash of Chulela hot sauce. Cold Modelo Negro ..I am sure can be done as a Sushi....but like Mexican beach Prep.

A bit more trim than I expected

It was delicious, but I needed to trim a little too much. Still had belly bones or cartilage.
