Riviera Seafood Club's Ōra King Salmon, also known as Chinook Salmon, is sustainably and responsibly farmed in the crystal clear waters flowing from Te Waikoropupū Springs of New Zealand. With every bite your palate is introduced to an elegant balance of sweet and umami flavors, complemented by an equally sophisticated texture of buttery and firm with the skin-on and bones-in. See our video below for how to skin and debone fish. Our Ōra King Salmon, or Masunosuke in Japanese, is sustainably certified by the Best Aquaculture Practices (BAP) and Aquaculture Stewardship Council (ASC) as well as recommended by Ocean Wise and the Monterrey Bay Aquarium. Prepared as a filet, Riviera's Ōra King Salmon is best enjoyed as sushi, sashimi, or light searing.

Through sustainable husbandry practices and a quarter century of breeding expertise, only a select few New Zealand King salmon are hand selected to be branded "Ōra" King Salmon by a master grader. Every Ōra King Salmon is individually numbered for traceability. Our Ōra King Salmon is harvested every morning guaranteeing the quality of your fish.

All orders of Ōra King Salmon, scientifically named Oncorhynchus tshawytscha, are individually packed and shipped using overnight express delivery. If you are intending to consume the seafood raw, do not freeze as this will ruin the integrity of the fish. We guarantee that our fresh Ōra King Salmon is the best quality that you can find.

What do I do when my Ora King Salmon arrives?

  • Arrives in 1 lb total frozen portions, no uniform sizing.  Unlike other species of salmon/salmonoids, the King Salmon from this specific farm is naturally parasite-free. For raw consumption, eat within 1-2 days of defrosting. Any longer, the portion will be searing, poke, or cooking grade.

For best results, eat properly stored frozen portions within 1-2 months of arrival.

Time your defrost process to a couple of hours before your meal for the optimal outcome.

Yes and no. Yes, you can refreeze it for a future cooking preparation. No, if you plan on using it for raw preparation.

Yes! We suggest that most super-frozen products may be stored in a conventional freezer for up to 2 months upon usage.

The United States is late to the game... Many countries, including Japan, depend on this technology to assure minimal loss in quality and maximum gain in shelf life.

Terrible cuts of Ora King

I paid $20 for 4-6 oz of Ora King tails with skin on. Hardly any meat. What a rip off
Very disappointed

Thank you for your feedback! The Ora King Salmon (Imperfect Cut) portions may include tail cuts or pieces with skin-on. They are great for marinating and cooking, but not all traditional preparations. If you are looking for a fleshier portion, we do have a (skin-on) Ora King Salmon filet option that is very versatile and great for any application!

Imperfect cut salmon

Do not recommended. leftovers and tail side of the salmon with a lots of fibers. Will never order again.

Ora King Salmon (Imperfect Cut) is usually the tails and trimmings that are removed when processing our Ōra King Salmon (Filet). Imperfect cuts are great for quick and easy recipes in the oven, on the stovetop, or in the air fryer. If you are looking for sashimi grade Salmon, we do have a (skin-on) Ora King filet option that is very versatile and great for any application!

Not the best cut unfortunately

Thought imperfect cut was referring to the shape…I only got tail cuts, which were not the best as everyone knows…wish the description was more clear.

Thank you so much for your feedback. We since made changes to this product to reflect your feedback!
