The most delicious part of the fish

Often discarded the collars are considered a delicacy and are absolutely full of flavor and mouth watering fats. I love a simple marinade and a quick broil to crops the skin and just barely cook the meat through. They are fun to eat too, like chicken wings of the sea! Highly recommend.
