I hope my review will help someone looking for the same type of salmon.

I bought this salmon for my wife to eat raw with truffle oil and green onions. A dish that is absurdly expensive at a local upscale sushi restaurant. After scouring Reddit and other forums looking for the best quality salmon to eat raw while not being absurdly expensive, I couldn't find much. I saw Riviera was only mentioned once on Reddit. The person said Riviera was great. All other suppliers online seem to be charging 50% more.

I ordered 1 lb to test. I got dry ice and denatured alcohol to flash freeze after slicing the 1 lb into 4 oz servings and vacuum sealing each serving in my chamber vacuum.

After my wife tried just a taste test, she was floored by the texture and flavor. Much much better than the restaurant! She ended up defrosting the rest of the salmon the very next day and eating at all. In fact the salmon was so good, she stopped putting the truffle oil in onions on it haha. We just ordered 12 lb to take advantage of the free shipping.
