It has a superb taste and texture due to the nutrient-rich, cold, pristine waters of the Southern Ocean. The slow-growing lobster species has a sweet, delicate but firm white flesh, which makes it perfect for decadent cooked preparations.

For a Real lobster Flavor, I detest the Maine Lobster.One might as well eat ground up paper soaked in Clam Juice. Spiny warm water Lobsters , have the incredible flavor that many people want in a lobster. The Lobster from Riviera was amazingly well frozen. Absolutely NO freezer burn anywhere. The half is a half....including legs...shell and everything one would expect after a Caribbean Dive.Perfect for grilling Shell down. I also used the shells and legs for a stock...and my Lobster Alfredo.The strong tasting stock was perfect for the alfredo...with the chunks of lobster tossed in towards the end. The tails are a bit costly but worth every dollar!!
