From previous experience

I haven't eaten yellowtail yet but comparing the salmon and salmon belly that we did eat, it was by far the freshest I've ever used for sushi.
I've eaten sushi for 30 years and now make it going on a couple years. I have bought from other processors at least until now. I don't think I will purchase anywhere else unless they are out and I really need it.
Usually ( from other places ) by the 24hr mark to eat or trash time, the others start to have that not so fresh taste etc. But Riviera's salmon tasted as clean and fresh as competitors on day 1. Now add on the ability to get real Wasabi and no reason to shop anywhere else.
