A choice cut..Given the quality after defrosting ....The Fish is almost fresh..With the Bone structure intact I found this perfect in a Cioppino as remained intact and did not break up. I have also simply grilled Caribbean Style and excellent as well....the meat remains intact and not dry as the collar provides Moisture and Juices....but do not over cook...I will certainly order this delicacy again....for the boring who despise Fish with bones...stay with a dried out filet of Nauseating (UGGGG.....Tilapia) .
