    Each of our Yellowtail Collars are sustainably certified by the Aquaculture Stewardship Council (ASC). Kampachi Kama, called simply Kampachi in Japanese, are the fattiest section of the yellowtail offering a rich, buttery flavor with a flaky texture.

    Yellowtail Collars, scientifically named Seriola rivoliana, are individually frozen and packaged in one pound packages, making them extremely easy to prep and cook quickly. Kampachi Kama are shipped using overnight express delivery and will always be delivered to your table within two days (one day for processing, one day for delivery). Amazing ...

My 2nd order ... Kampachi Cheeks, as we call them are very rare on the East Coast... My order, like every order I've received, was Amazing !!!!

Collagen is just dripping from this...

Yellowtail is my favorite. Ideally, it’s hard to find collar separately but they got it. I grilled with just truffle salt/pepper. Then, added lemon. Meat was very tender and juicy!
