We offer our Ora King Salmon two ways, either arriving fresh (never frozen) or Superfrozen. Selecting the fresh option is best if you plan on consuming the salmon within a day or two of arriving at your door. Selecting the Superfrozen option is best if you plan on using it later. Superfreezing is a method of freezing foods below -60°C, locking in the quality, freshness and texture, while also allowing you to store it long term in your freezer, making this option extremely popular & convenient.

Superfrozen Defrosting Instructions
Method I: Place superfrozen product in cold water (preferably an ice bath) for 15 to 30 minutes, until thawed. Remove the portion from the plastic, pat dry and wrap with our white butcher paper provided. Cut and enjoy within 24 hours.
Method II: Remove the portion from the plastic bag, wrap with a paper towel and place in the refrigerator overnight. Cut and enjoy within 24 hours.
When should I consume my product once thawed? Time your defrost process to a couple of hours before your meal for the optimal outcome.
Can I refreeze my leftover product for future use after it's thawed? Yes and no. Yes, you can refreeze it for a future cooking preparation. No, if you plan on using it for raw preparation.
Can I store my super-frozen product(s) in my conventional freezer for future use? Yes! We suggest that most super-frozen products may be stored in a conventional freezer for up to 2 months upon usage.
Why haven't I heard of super-frozen seafood in USA? The United States is late to the game... Many countries, including Japan, depend on this technology to assure minimal loss in quality and maximum gain in shelf life.
Fresh Ōra King must be stored in the refrigerator immediately upon arrival. Unlike other species of salmon/salmonoids, the King Salmon from this specific farm is naturally parasite-free. For raw consumption, eat within 1-2 days. Any longer, the portion will be searing, poke, or cooking grade.
You can also freeze these portions immediately upon arrival and store for up to one week for sashimi use or 10 days for poke, searing, and cooking preparations (keep in mind that freezing sashimi grade fish diminishes the quality of the meat as the cell membrane is not well maintained in conventional home freezers). For best results, eat properly stored frozen portions within 1-2 months of arrival.
I love these filets. I use them for sushi and poke' bowls. If I can eat them raw they are certainly EXCELLENT Salmon! They are always extremely fresh tasting and the size is perfect for a meal.
