Lemon Garlic Salmon

Refreshing light combo with notes of Meyer lemon and fresh garlic + perfectly baked New Zealand King Salmon + farm fresh organic squash and cauliflower. A simple but incredibly sophisticated baked Salmon preparation.

  • NZ King Salmon - 2 lbs (Filet, skin on)
  • Olive oil - 1 1/2 tsp
  • Squash - 1 Cup
  • Cauliflower - 1 Cup
  • Red Onion - 3/4 Cup
  • White Garlic - 4 Cloves
  • Meyer Lemon - 1 tbsp juice (approx 1/2 lemon)
  • Sea salt - 1/8 tsp (“pinch” of salt)


To prepare perfect baked salmon:

  1. Prepare your mise en place of chopped vegetables + 2lbs King Salmon (Or 4x ½ lb portions)
  2. With a large mixing bowl, toss the squash, cauliflower, garlic, and olive oil until the vegetables are evenly coated
  3. Lightly coat the Salmon with olive oil and place all portions on top of a large bake tray (skin side down)
  4. Pour the vegetables over the salmon portions and add salt
  5. Place the tray in the oven at 375 F for 15 - 20 minutes
  6. Serve when it’s hot. Enjoy!
