These fish feature exceptional fat distribution throughout resulting in rich, crisp, and slightly sweet flavors with soft & luxurious textures greeting you with every bite. Hon-Hamachi Yellowtail are raised in low density pens 48x larger than traditional pens allowing the fish to grow stronger, healthier and tastier.
By superfreezing our fresh seafood, in special ultra-cold -60°C freezers, we are able to lock in the freshness and texture of our sushi-grade seafood, while also allowing you to store our products in your conventional freezer for later consumption.
Also, to help many of our customers, most of our superfrozen seafood is shipped out in 8oz portions so you can order more at one time to save on shipping costs, and so you can thaw only the amount you need.
Perfect size for sashimi. Great texture and color looks good. Overall, very satisfied.
Ordered toro, hon-hamachi, king salmon, king salmon belly and caviar - loved it all! Always fresh and delicious - ordered when promised with no hassle. Love Riviera Seafood

Delicious and fresh!
Skin is annoying and a few sneaky bones, but delicious and tender yellowtail is hard to beat!

From previous experience
I haven't eaten yellowtail yet but comparing the salmon and salmon belly that we did eat, it was by far the freshest I've ever used for sushi.
I've eaten sushi for 30 years and now make it going on a couple years. I have bought from other processors at least until now. I don't think I will purchase anywhere else unless they are out and I really need it.
Usually ( from other places ) by the 24hr mark to eat or trash time, the others start to have that not so fresh taste etc. But Riviera's salmon tasted as clean and fresh as competitors on day 1. Now add on the ability to get real Wasabi and no reason to shop anywhere else.
Great flavor, small fillet with too much blood line
Really likely the flavor and am trying the other Hamachi options, way too much blood line for the size of the fillet in our opinion.
