Storage

Superfrozen Hon-Hamachi Yellowtail can be stored in a conventional freezer for up to 2 months before losing quality.

After thawing, Hon Hamachi Yellowtail must be consumed within 1-2 days for raw consumption,. Any longer and the portion will be searing, poke, or cooking grade.

Defrosting

Place superfrozen product in cold water for 15 to 30 minutes, until thawed. Remove the portion from the plastic, pat dry and wrap with our white butcher paper provided. Cut and enjoy within 24 hours.

I haven't eaten yellowtail yet but comparing the salmon and salmon belly that we did eat, it was by far the freshest I've ever used for sushi.
I've eaten sushi for 30 years and now make it going on a couple years. I have bought from other processors at least until now. I don't think I will purchase anywhere else unless they are out and I really need it.
Usually ( from other places ) by the 24hr mark to eat or trash time, the others start to have that not so fresh taste etc. But Riviera's salmon tasted as clean and fresh as competitors on day 1. Now add on the ability to get real Wasabi and no reason to shop anywhere else.

Great Hon-Hamachi for sashimi

I ordered the 8oz superfrozen Hon-Hamachi and it was delivered to me in great condition (still frozen). It took a day to thaw out in the fridge and was ready to cut for some a sashimi feast at home (I also ordered a few other items such as the Otoro and Chu-Toro). My family loved it! It tasted great along with the other items.

This is the best tasting yellowtail I’ve had thus far. It was tasty chopped up with scallions and salt. Sashimi style was delicious too!
