Riviera Seafood Club's Wild-Caught Japanese Sea Scallops, scientifically named Patinopecten yessoensis, are sustainably and responsibly wild-caught in Hokkaido, Japan. Their flavor is incredibly deep and rich paired with a complex texture that is either delicate and soft when raw or firm when cooked. Wild-Caught Japanese Sea Scallops, called Hotatekai in Japanese, will arrive at your door as frozen whole scallops.
Our Wild-Caught Japanese Sea Scallops are sushi and sashimi grade best either raw or pan-seared. Riviera's Japanese Scallops are sustainably sourced with our fisherman receiving the Maine Stewardship Council’s accreditation as a globally sustainable fishery.
All orders of Wild-Caught Japanese Sea Scallops are individually packaged, frozen using IqF, and shipped using overnight express delivery. Each order is shipped in refrigerated packaging and will arrive at your dining table within two days (one for processing, one for shipping). We guarantee our Japanese Sea Scallops are the best quality that you can find!
By superfreezing our fresh seafood, in special ultra-cold -60°C freezers, we are able to lock in the freshness and texture of our sushi-grade seafood, while also allowing you to store our products in your conventional freezer for later consumption.
Also, to help many of our customers, most of our superfrozen seafood is shipped out in 8oz portions so you can order more at one time to save on shipping costs, and so you can thaw only the amount you need.
Although superfrozen seafood is extremely convenient for many of our customers, some people still prefer fresh seafood.
If you would prefer fresh cuts, feel free to reach out to place a custom order with us.
Note: "Fresh (never frozen)" seafood needs to be consumed as soon as possible. Do not re-freeze seafood as this will ruin the integrity of the fish.
Time your defrost process to a couple of hours before your meal for the optimal outcome.
